Economic, technical and organisational factors were analysed as well as establishing a transition timeline. These elements enabled the Municipality of Florence to evaluate the transition to an in-house service. The goal was to improve meal quality and promote food education. <\/p>\n<p class=\"p1\"><b>NEEDS: <\/b>Upon completion of the technical, economic and financial analysis of the 15 Cooking Centres, the Education Department of the Municipality of Florence requested an in-depth analysis towards the transition from an outsourced to an in-house service.<\/p>\n<p class=\"p1\"><b>RESULTS: <\/b>Th<b>e <\/b>assessment process will enable the Municipality to move from outsourced to in-house meal management, averaging 20,000 meals per day.<span class=\"Apple-converted-space\"> <\/span><\/p>\n<p class=\"p1\">The municipality\u2019s aim is to guarantee meal quality, food education, work stability and supply chain development with local businesses involvement.<\/p>\n<p class=\"p1\"><b>SPECIFICATIONS: <\/b><span class=\"Apple-converted-space\">T<\/span>he economic, technical, managerial and organisational congruity of the in-house management of the school canteen of the Municipality of Florence was evaluated and a timeline was implemented.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Pre-analysis and evaluation service for transitioning from an outsourced school catering management model to an in-house model.
