PROJECT DESCRIPTION: The project was a technical-economic evaluation of 15 Cooking Centres commissioned by the Education Department of the Municipality of Florence. We identified how they can increase efficiency, sustainability and quality of school canteens. We focused on meal preparation, special diets and staff training.
The proposed solution helped the institution to move towards sustainable and a healthy service.
Undertaken activities include document collection, visits, interviews, evaluation of flows and layouts, machine analysis and solution restructuring.
NEEDS: Guarantee healthy meals responding to the consumer’s needs. Promote a sustainable and healthy diet. Improve food security.The Education Department of the Municipality of Florence highlighted the need to assess items/appliances in Cooking Centres and canteens. This led to an evaluation of the equipment, machinery and the review of the logistics facilities.
RESULTS: CibuSalus provided the client with a clear technical-economic analysis of the Cooking Centres. Provided improvement suggestions to increase service efficiency and quality. Special focus was given to meal preparation, special diets and staff training. These suggestions guided the institution towards solutions guaranteeing sustainable and healthy school meals.
SPECIFICATIONS: Using CibuSalus’s proprietary methodology, an economic valuation was carried out on machinery and equipment for each of the 15 Cooking Centres.
Main activities carried out:
- document collection and analysis, inspections of the 15 Cooking Centres and counterpart interviews;
- preparation of a technical sheet including all the required assessments;
- solution restructuring to make the service more efficient.
