PROJECT DESCRIPTION: Pre-analysis and evaluation for a transition from an outsourced school catering service to an in-house one. Economic, technical and organisational factors were analysed as well as establishing a transition timeline. These elements enabled the Municipality of Florence to evaluate the transition to an in-house service. The goal was to improve meal quality and promote food education.
NEEDS: Upon completion of the technical, economic and financial analysis of the 15 Cooking Centres, the Education Department of the Municipality of Florence requested an in-depth analysis towards the transition from an outsourced to an in-house service.
RESULTS: The assessment process will enable the Municipality to move from outsourced to in-house meal management, averaging 20,000 meals per day.
The municipality’s aim is to guarantee meal quality, food education, work stability and supply chain development with local businesses involvement.
SPECIFICATIONS: The economic, technical, managerial and organisational congruity of the in-house management of the school canteen of the Municipality of Florence was evaluated and a timeline was implemented.
